Foodie Friday: Vegan Bean Dip

Who said you need cheese and sour cream to make a great bean dip? Not even close, folks! This is one of my favorite dishes I make because it’s easy, healthy, and hearty. There’s nothing too special about it, but I’m always amused at the responses I get when I bring this exact dip to parties and get-togethers. Yes, it’s vegan, yes, it’s amazing! Such an overlooked dish in my opinion.  Enjoy!

Ingredients (go organic if you can):

1 can of mashed beans
guacamole
pico de gallo
corn
cilantro
cilantro lime rice (bought from Whole Foods)
red onion and green onion
jalapenos
salsa
lettuce
chips
