Simple but Delicious

Mondays aren’t usually this great, so I’d thought I share. I entertained myself with the simple things in life; friends, wine, treats, and a great dinner.

Wine and Cupcakes: I headed to the Plant Cafe Organic with friends that were visiting from SJ. We enjoyed wine and some treats (vegan). Ummmm to die! I’ve never had a vegan cupcake, so naive, but amazing. Not to be a BIA but it was better than the “real” thing; vanilla with chocolate frosting. The smallest things, I swear, can do wonders. Anytime a glass of wine is involved, you know I’m having a good day, and the cupcake; moist, fresh, sweet, but not too sweet. We even ate all the frosting, which tells you something! To top it off the bestie was up to share in all of the fun.

Salad and Veggie Dinner: I devoured the salad before I could take a picture, but discovered a great, great new salad dressing. I put together an effortless concoction, from the help of my roommate and the fact that I had no other options in the apt; it’s light, healthy, easy, and fresh.

Ingredients: Olive Oil, Balsamic vinegar, Lime, Salt, and Pepper.

Salad: Romaine and mixed herb lettuce, carrots, cucumber, red onion, bell pepper, walnuts, and pita chips

Broccoli and Brussels Sprouts: sauteed olive oil, red pepper flakes, garlic, broccoli, brussel sprouts, almonds, salt, and pepper.

*I steamed the broccoli first and baked the Brussels sprouts at 305 degrees for 15 minutes.

Sometimes you have to sit back and appreciate the simple things in life; it’s always greater if you have a glass of wine in hand and some sweets. Good day, thank you Monday!
