Vegetable Fried Rice

I normally have all of these ingredients on hand at all times, so why I haven’t made this dish until now, blows my mind. Let me just say, fried rice > veggies on top of rice anyday. Same ingredients but different prep and you have a whole new dish.

I do want to mention the Whole Foods version of sriracha is a great staple for this dish and many Asian dishes. It’s more sweet and less spicy than your traditional sriracha sauce. Think chili paste meets sesame oil.

Ingredients
Brown Rice
Garlic
Sesame Oil
Gf soy sauce
Sriracha (from Whole Foods)
Lime
Broccoli
Bell pepper
Onion
Green onion
Seaweed
Cilantro
Salt & pepper

Directions

1. Cook rice. I find my rice always taste best when I use my rice cooker (2 cups water for 1 cup rice). Also, I use brown jasmine rice from Trader Joes.
2. Saute garlic in sesame oil. Once garlic starts to yellow add a little bit of lime juice, soy sauce, and sriracha.
3. Toss is veggies and saute until the broccoli is tender. Salt and pepper to taste.
4. Add rice, more soy sauce, sesame oil, sriracha, and mix it all together.
5. Add green onion in last before you serve.
6. Top it off with seaweed and cilantro and voila!

*I used vegan seaweed from Trader Joes.
