That’s So Vegan

My favorite vegetables, fruit, beans, and nuts

As the holiday get-togethers came and went, I recall discussing my eating habits quite a bit. Everywhere I went I was asked the same question; what do vegans eat, or more specifically what does your diet consist of? I can understand where people are coming from, but I also think it’s funny because many think that if you don’t have meat or dairy in your diet, there must be nothing to eat.  Since everyone seems to be intrigued by vegans,  I thought I would share with you some vegan options and what I’ve been eating lately…

First, let me explain to you what it means to be vegan. By definition, a vegan is someone who eats no animal products at at all; this includes all meat products, fish, eggs, milk, and butter.

What I’ve been Eating:

Luna Nuts Over Chocolate

Breakfast: Dry cereal (I do enjoy soy milk, but dry cereal has grown on me),  steamed lemon water, or coffee with soy milk.

Snacks: Apples and celery with peanut butter, mixed nuts, Kettle Baked Potato Chips, corn tortilla chips with salsa or hummus, vegan donuts, Newmans Own unsalted and unbuttered popcorn (Whole Foods), Luna Bars (all made without dairy), soy or rice cream (Whole Food), strawberry smoothies.

Entrees: Amy’s Rice and Bean (non-dairy) burrito, edamame, steamed rice with

Kettle Baked Lighty Salted

vegetables, almond broccoli (made with olive oil, garlic, salt, peeper, almonds), brown rice pasta with marinara and vegetables, Thai food (pad Thai or any noodle dish without egg), clean Mexican food (beans that are made without chicken stock or any meat products), salads with olive oil and vinegar dressing, baked home fries.

*If my main meal lacks protein, I usually add a side of edamame (great source of protein).

*I normally don’t eat meat and cheese substitutes (think soy cheese or soy nuggets), except when eating a veggie burger, but this is not often (Every vegan is different, but I feel if I’m not eating the real thing, I’m not eating the fake thing).
