I’ve been stuck in a rut when it comes to breakfast ideas. I’m embarrassed to admit, I’ve been eating the same things for years. I’m already not a huge fan of breakfast food, add being a vegan, and you don’t have many options to begin with. I used to love yogurt and granola back in my non-vegan days (around 10 years ago), so the idea of a smoothie bowl seemed like a no brainer. When I was younger I used to eat this breakfast granola smoothie at Jamba Juice. You probably never heard of it, but it was one of my favorite things to snack on. After exhausting all my tired options, I decided to make a Jamba Juice inspired smoothie bowl at home. Um, best idea ever! I use granola from Trader Joe’s most of the time, but homemade granola is probably your best option (it helps cut down on the sugar). Mike and I get spoiled with my aunt’s delicious homemade granola every now and then (let me know if you’re interested in the recipe) and man, it’s amazing. Also, feel free to add any and all your favorite berries and even protein powder.

Warning – if you plan on making this during the colder months, you will freeze your butt off. Add a ton of layers or snuggle up to a cozy blanket. It’s too good to wait for warmer days!

S M O O T H I E  R E C I P E  &  I N G R E D I E N T S

  • A handful of frozen strawberries
  • ½ frozen banana
  • Half water, half apple juice (not concentrate)
  • Granola
  • Coconut
  • Strawberries

Liquid to fruit ratio for the perfect smoothie:

Fill a 16oz glass with frozen banana and strawberries until the glass is full. Pour half apple juice and half water until glass is nearly full. Dump everything into blender and blend.
