Happy Monday, friends! How was your weekend? Not to sound crazy, but it’s nice to see a normal Monday. With last week’s holiday schedule, I felt super out of whack and didn’t know what day it was everyday. Could also be pregnancy brain, too. Saturday we kept things pretty low key. We made vegan cinnamon blueberry pancakes in the morning (modified this recipe), I went for a run, made lunch, and then worked. I have so many things I want to get done work wise before Baby D arrives, so I feel like I need to put in the work now. I’m also battling fatigue, so I’m trying to work any time I’m feeling motivated. Sunday we decided to splurge, so we headed downtown for donuts, coffee, and acai bowls before we stopped by baby Gap and did our grocery shopping for the week.

Speaking of grocery shopping, Mike is trying out a plant-based diet for 30 days. I’ve been plant-based for over 10 years now, so it’s been super fun to have him on board. We’ve watched plenty of food documentaries over the years, but for some reason Mike decided to give up meat and dairy after watching What the Health last week. Of all the documentaries on food out there, this one has to be my favorite and I would encourage you to watch it. If you feel this documentary is one sided, we also watched Food Choices on Netflix, and felt it was a little more well rounded. Not as pretty with graphics, etc. but more information about all sides.
We’re actually going to be doing a plant-based diet Instagram Live later this week where I share my experience and answer any of your questions. I received a ton of DM’s on Instagram, so I figure it’s something you’re interested in. Be sure to follow my Instagram Stories so you know what day and time we’re going live.
