Chocolate Covered Pretzels

I love chocolate covered pretzels; they’re pretty, simple, delicious, and can be easily made vegan. Aside from the chocolate/peanut butter combination, chocolate paired with glazed, salted crackers might be one of my favorite desserts. I’ve been meaning to make homemade chocolate pretzel rods, but couldn’t decide which yummy, sweet toppings to smother atop the rods. I wanted to stay away from sprinkles and candy bars to make it more of a cleaner, no preservative kinda treat. I found this recipe and was hooked. I used walnuts, vanilla bean sandwich cookies (vegan oreos), and peanut butter cups from Whole Foods (not vegan, but the bf’s fav).

Honestly, I’m impressed! So good, so easy, and easily adaptable to your personal taste.

Chocolate Covered Pretzels

Ingredients:

  1. Parchment paper
  2. Pretzel rods (V)
  3. 160z Vegan chocolate chips
  4. Late July Organic Vanilla Bean Sandwich Cookies (Whole Foods) (V)
  5. Walnuts (raw or roasted ) (V)
  6. Peanut butter cups (Whole Foods)

Directions

To melt the chocolate I followed these directions. I know dipping things into melted chocolate is a scary task, but this is so simple, and it so works.

  1. Place 12 ounces of chocolate chips into a heat-proof glass bowl and put into microwave for 30 seconds.
  2. Stir the chocolate and return to microwave for another 30 seconds, stir.
  3. Continue to heat and stir in 30 second increments until the chocolate is melted.
  4. Once melted, immediately stir in the last 4 ounces of choc chips. Continue to stir until chocolate is smooth.
  5. Cover 3/4 of the pretzel rod with chocolate and then dip away.
  6. Place on parchment paper and let the chocolate dry.
  7. Eat up and enjoy.
