Vegan Peanut Butter Cookies
With the Christmas tree up, and the rain falling, I thought I’d add to the holiday spirit by baking a batch of peanut butter cookies from Oh She Glows. Yes vegan and simple, but definitely not the most healthy… oh you know, a cup of peanut butter, a pound of maple syrup…oh well :) They turned out great at 350 degrees for 11 minutes.
p.s. If your peanut butter, maple syrup, and/or almond milk are NOT sweet, you might want to add some sugar to the recipe.
Oh She Glow’s Auntie Angie’s Soft Peanut Butter Cookies
- 2 cups whole wheat pastry flour
- 1 tsp baking soda
- 3/4 tsp kosher salt
- 1 cup peanut butter
- 1/3 cup of extra virgin olive oil
- 3/4 cup pure maple syrup
- 1.5 tsp vanilla extract
- 1/4 cup almond milk
- Turbinado & kosher salt, for sprinkling on cookie before baking
