Delicious Brussels Sprouts
So the other day I walked into the apartment and smelled the aroma of sauteed vegetables (I have a really strong sense of smell, which can be great in this instance, but can be torturous in others)… I knew it was something green, garlicky, and very familiar. To my surprise, my roommate whipped up a great Brussels sprouts vegetable saute. I remade this recipe today and let me tell you, so fabulous; it’s easy, pretty to look at, and super healthy! Courtesy of my roommate, Malia, I had to share this fabulous easy, vegan, vegetarian recipe that everyone can enjoy.
Ingredients:
Garlic, white/yellow onion, grapevine/cherry tomatoes, fresh spinach, Brussels sprouts, salt, and pepper.
How to:
Bake: Set oven to 350 degrees, drizzle olive oil, salt, and pepper over Brussels sprouts and bake for 15-20 minutes or until tender.
Saute:In a pan or wok, bring olive oil and garlic to a simmer. Add onions, salt, and pepper and cook until onions are golden yellow. Then add spinach and Brussels sprouts and mix until fresh spinach is cooked. Finally, add the tomatoes, stir, add salt and pepper to taste and viola!
This recipe is really simple and delicious. Make it your own and add: chicken, rice, tofu, pesto (the Malia way), or something spicy (my way)!
